Vangibath

INGREDIENTS:
* Purple brinjals - 2-3 cut into small pieces

* Green chilli - 1 chopped finely

* Onion - 1 chopped finely

* Salt - to taste

* Vangibath powder - 1 1/2 tsp (MTR vangibath powder)

* Cooked rice - 1 cup

* Oil - 2 tbsp

* Mustard seeds - 1/2 tsp

* Cumin seeds - 1/2 tsp


METHOD:
* Heat oil in a non-stick kadai.

* Add mustard seeds and cumin seeds.

* After they splutter, add the green chilli, onion and brinjals.

* Add salt, vangibath powder and cooked rice.

* Mix well properly.

* Serve hot.
